From Atami, you can catch a ferry to either Izu Oshima or Hatsushima. The ride to Hatsushima is super quick, taking only about 25 minutes. You can even buy your tickets online in advance, which usually includes both the ferry fare and access to the island's hot spring. Pick a day with good weather, because the scenery is absolutely stunning! Hatsushima itself isn't very large. There are nice resting spots and individual bungalows, along with outdoor climbing facilities, which require separate tickets if you want to use them. Also, keep in mind that some restaurants on the island are cash-only, so it's a good idea to bring some cash with you. For a day trip, you'll have plenty of time to head back to Atami for dinner. I highly recommend trying Atami's braised sea bream – it's delicious! Get off at Atami Station on the JR Tokaido Shinkansen, and take the bus to Atami Port and Korakuen at Platform 8 on the left. (There is a circular bus on Sundays, and the full-day ticket is 800 yen.) After getting off the bus, go to the ticket window or ticket vending machine at the boarding area to purchase a round-trip ticket. Then go to the waiting area to board the ship. Near the Korakuen Bus Stop, you can also take Japan's shortest ropeway (3 minutes) for 500 yen (one way).
