This restaurant is a must-eat place every time. Fortunately, the soup for rice noodles is not boiled enough, so you need to add seasonings to the rice noodles. This is generally the case in Panxi area. If you don’t add seasonings, you will miss your bowl of noodles. It is recommended to add more salt to show its "freshness". In addition, there are green pepper powder and burnt chili peppers, which basically complete the basis of deliciousness. If you like to try, you can blanch fresh mint leaves at the bottom of the bowl, which will have another flavor. Sheep blood and sheep feet come with dipping saucers, which are relatively fresh and spicy. This old restaurant can be the first choice for local rice noodles.
When the clear broth mutton rice noodles were served, the soup was very clear and warm to the touch. The mutton was cleaned thoroughly, with little gamey smell, and the broth had a rich, slowly simmered flavor. The portion of rice noodles was quite generous; a small portion would have been enough. Halfway through the meal, I suddenly thought that if a small handful of fresh patchouli leaves were sprinkled in, the aroma would be even more unique.
The lamb here is incredibly generous! And there's absolutely no gamey taste; the meat is stewed just right, neither too tough nor too mushy. You absolutely must try adding mint leaves; they're a perfect complement to the lamb and cut through the richness. The soup is also delicious; I always end up having a couple of bowls. If you go, remember to go early, as it gets very crowded during peak hours.
