Yuncheng, Shanxi, is one of the local restaurants that locals love the most. The word &quot;flavor&quot; has been removed from the actual store sign, but the flavor remains the same. As soon as you enter the door, you can see a large picture of noodles being cut with a big knife, which is quite shocking. The meals are both hot and cold, and the staple food is basically dominated by carbonic noodles. A bowl of oil-splashed noodles is like a living god. The signature Longxing four small bowls are a combination of meat and vegetables combined with carbonic water, with a full range of flavors. In terms of service, they run around and the narration is transparent, which is quite good.

There&#39;s so much to choose from that the three of us ordered a large table. The mutton soup is a must-try! We ordered the premium 32-yuan set, which included mutton and blood, and we shared it between us. We even got free refills of soup, but it was a bit salty and spicy. Shanxi cuisine can be quite strong for someone who normally eats light. The mutton and carrot dish was even more impressive. We had planned to split one between the three of us, but we couldn&#39;t finish it! Why were there so many flatbreads?

The pickled garlic was enormous, but too salty.

I tried both the lamb chops and the lamb shank and tripe wraps; the chive dip was excellent, but I prefer the lamb offal. I ordered the stir-fried lamb tripe with garlic, which was a full plate and incredibly satisfying, spicy and sour, and slightly oily. The stir-fried lamb blood was a real surprise; I didn&#39;t expect it to be so good! Even my friends who don&#39;t eat lamb blood enjoyed a lot. It&#39;s both affordable and generous. The candied sweet potato was a little sticky, but it was also a great dessert.
