"7th Door" refers to the seventh flavor in food. The five flavors are sour, sweet, bitter, spicy, and umami; the sixth is fermentation; and the seventh is the chef's sensibility. With Korean fermentation as the theme, every dish incorporates a fermentation element. If you haven't heard the introduction, you might not notice the sheer number of fermented ingredients. This is what I find so ingenious about 7th Door: the fermented flavor isn't overtly noticeable, but rather serves as a link between the ingredients. Everything is perfectly balanced; fermentation isn't just for its own sake; it truly elevates the dish and adds the finishing touch.
